Ingredients
- Cod fillet400 g
- Breadcrumbs4 tablespoons
- Extra virgin olive oil2 tablespoons
- Garlic1 clove
- Parmigiano Reggiano DOP1 tablespoon
- Parsley1 teaspoon
- Black pepperto taste
- Fine saltto taste
Procedure
0. In a bowl, combine breadcrumbs, grated garlic, chopped parsley, pepper, and a pinch of salt.
1. Brush the cod fillets with a drizzle of extra virgin olive oil, massaging them well on all sides.
2. Coat the fillets in the breadcrumbs, pressing them down with your hands to ensure they adhere well. If you have any leftover breadcrumbs, set them aside.
3. Arrange the fillets on a baking sheet lined with parchment paper. Sprinkle the remaining breadcrumbs over the fillets and drizzle with more oil.
4. Bake for 20-25 minutes until golden and crispy. For an even more gratinated effect, turn on the broiler for the last 2 minutes.
5. Excellent with fresh salad or roast potatoes.
