  • 0. In a bowl, combine breadcrumbs, grated garlic, chopped parsley, pepper, and a pinch of salt.
  • 1. Brush the cod fillets with a drizzle of extra virgin olive oil, massaging them well on all sides.
  • 2. Coat the fillets in the breadcrumbs, pressing them down with your hands to ensure they adhere well. If you have any leftover breadcrumbs, set them aside.
  • 3. Arrange the fillets on a baking sheet lined with parchment paper. Sprinkle the remaining breadcrumbs over the fillets and drizzle with more oil.
  • 4. Bake for 20-25 minutes until golden and crispy. For an even more gratinated effect, turn on the broiler for the last 2 minutes.
  • 5. Excellent with fresh salad or roast potatoes.
