  • 1. If using frozen cod, thaw it and dry it thoroughly. Steam it or pan-fry it with a drizzle of oil for about 5 minutes, until it flakes easily. Fluff it with a fork and remove any bones.
  • 2. In a bowl, combine the crumbled cod, mashed potatoes, egg, breadcrumbs, chopped parsley, grated garlic (if desired), Parmesan cheese, salt, and pepper. Mix until smooth. If the mixture is too soft, add more breadcrumbs.
  • 3. Take small portions of the dough and shape them into round balls. Roll them in a little breadcrumbs for a crispier crust.
  • 4. Arrange the meatballs on a baking sheet lined with parchment paper and brush them with a drizzle of extra virgin olive oil. Bake in a preheated oven at 200°C (400°F) for about 20-25 minutes, turning them halfway through for even browning.
  • 5. Serve the meatballs hot, accompanied by a yogurt sauce or a fresh salad.
  • 6. For a bolder flavor, add grated lemon zest or a pinch of paprika.
