Budino al cocco grattugiato senza glutine e senza lattosio
Ingredients
- Coconut milk500 ml
- Coconut60 g
- Granulated sugar50 g
- Rice flour50 g
- Potato starch25 g
- Eggs2 u (120 g)
- Ground cinnamon1 teaspoon
- Ginger1 teaspoon
- Orange zestto taste
Procedure
0. Crack the eggs, separating the yolks from the whites. Pour the yolks into a saucepan and the whites into a bowl. You can use them later in an omelette, for example. Add the sugar to the yolks and mix. While stirring, add the flour, potato starch, grated coconut, cinnamon, and ginger.
1. Finally, pour in the coconut milk and stir again before placing the pot on the stove. Continue cooking until it boils. Coconut milk thickens more slowly, so it will take a few minutes longer to thicken.
2. When ready, pour the still-warm pudding into a wet mold. Let it cool for a few more minutes and then refrigerate. Once cooled, invert it onto a plate and sprinkle with grated orange zest. Garnish with sliced strawberries.
