  • 0. In a bowl, combine the orange juice and lemon juice. Add a drizzle of extra virgin olive oil, salt, pepper, and oregano (fresh or dried).
  • 1. Arrange the salmon fillets in a baking dish and pour the marinade over them. Cover with plastic wrap and refrigerate for at least 30 minutes.
  • 2. Preheat the oven to 180°C. Bake the salmon in the same baking dish with the marinade for 15-20 minutes, turning the steaks halfway through to coat them evenly.
  • 3. Rinse the basmati rice under cold water until the water runs clear (this helps remove excess starch).
  • 4. Place the rice in a pot with double the volume of water (about 300 ml for every 150 g of rice). Add a pinch of salt.
  • 5. Bring to a boil over high heat, then reduce the heat to low, cover with a lid and cook for about 10 minutes without stirring.
  • 6. Turn off the heat and let the rice rest, covered, for another 5 minutes. Fluff it with a fork before serving.
  • 7. Wash the broccoli and divide it into florets. Bring a large pot of salted water to a boil. Cook the broccoli for 5-7 minutes, until tender but still crunchy.
