Ingredients
- Salmon400 g
- Broccoli300 g
- Basmati rice150 g
- Extra virgin olive oil3 tablespoons
- Dried oregano1 teaspoon
- Lemon1 u (85 g)
- Oranges1 u (150 g)
- Garlic1 clove
- Black pepperto taste
- Fine saltto taste
Procedure
0. In a bowl, combine the orange juice and lemon juice. Add a drizzle of extra virgin olive oil, salt, pepper, and oregano (fresh or dried).
1. Arrange the salmon fillets in a baking dish and pour the marinade over them. Cover with plastic wrap and refrigerate for at least 30 minutes.
2. Preheat the oven to 180°C. Bake the salmon in the same baking dish with the marinade for 15-20 minutes, turning the steaks halfway through to coat them evenly.
3. Rinse the basmati rice under cold water until the water runs clear (this helps remove excess starch).
4. Place the rice in a pot with double the volume of water (about 300 ml for every 150 g of rice). Add a pinch of salt.
5. Bring to a boil over high heat, then reduce the heat to low, cover with a lid and cook for about 10 minutes without stirring.
6. Turn off the heat and let the rice rest, covered, for another 5 minutes. Fluff it with a fork before serving.
7. Wash the broccoli and divide it into florets. Bring a large pot of salted water to a boil. Cook the broccoli for 5-7 minutes, until tender but still crunchy.
8. Assemble the dish!
