Procedure
0. Place the cinnamon sticks (30-40 g) in a glass jar with pure alcohol. Close the jar and let it steep in a cool, dark place for about 10-15 days. Shake the jar daily to ensure the cinnamon is well infused.
1. During maceration, the aromatic compounds and polyphenols present in cinnamon are extracted into alcohol. Alcohol is an excellent solvent for many organic compounds, including the essential oils and tannins present in cinnamon.
2. The addition of alcohol helps break down the cinnamon cells, allowing the aromatic compounds to be released and dissolved.
3. After the soaking period, prepare the sugar syrup. In a saucepan, bring the water to a boil and add the sugar. Stir until the sugar has completely dissolved. Let the syrup cool completely.
