  • 0. Preheat the oven to 200°C. In a saucepan, bring the water, butter, and a pinch of salt to a boil. Remove from the heat and add all the flour at once, stirring vigorously with a wooden spoon until the mixture forms a ball that pulls away from the sides of the pan.
  • 1. Let it cool for a few minutes, then add the eggs one at a time, mixing well after each addition until the mixture is smooth and even. Transfer the mixture to a piping bag with a plain tip and pipe small mounds onto a baking sheet lined with parchment paper.
  • 2. Bake for about 20-25 minutes until golden brown. Let cool completely.
  • 3. Melt the chocolate in a double boiler or in the microwave and let it cool. Whip the cream with the powdered sugar until frothy. Gently fold the melted chocolate into the whipped cream. Transfer the chocolate mixture to a piping bag.
  • 4. Make a small hole in the base of each choux pastry and fill the inside with the chocolate cream.
  • 5. Melt the chocolate and cream in a double boiler or in the microwave until smooth. Dip the tops of each choux pastry into the chocolate glaze or spoon it over the tops. Garnish with chopped pistachios (optional).
