Ingredients
- Manitoba flour300 g
- Whole milk120 ml
- Butter110 g
- Dark chocolate100 g
- Granulated sugar50 g
- Powdered sugar30 g
- Unsweetened cocoa powder10 g
- Fresh yeast5 g
- Eggs1 u (60 g)
- Fine saltto taste
Procedure
0. In a bowl, dissolve the yeast in the warm milk with a teaspoon of sugar and let it sit for 10 minutes. In a stand mixer (or by hand), mix the flour, sugar, and salt. Add the egg and milk with the yeast.
1. Knead for a few minutes, then gradually incorporate the softened butter (60g) until the dough becomes smooth and elastic. Cover the bowl and let it rise until doubled in size (about 2 hours).
2. Melt the chocolate with the butter (50g) in a bain-marie or in the microwave. Add the icing sugar and sifted cocoa powder, stirring until smooth.
3. After rising, roll out the dough on a floured surface into a rectangle approximately 30x40 cm. Spread the chocolate filling evenly over the surface. Roll the dough from the long side into a narrow cylinder.
4. Cut the cylinder in half lengthwise, obtaining two strips. Braid them together, leaving the filling side facing up. Place the braid in a greased loaf pan. Cover and let rise for another hour.
5. Preheat the oven to 180°C. Bake the babka for about 30-35 minutes, until golden brown.
