Ingredients
- Turnip tops600 g
- Chickpeas (precooked)300 g
- Breadcrumbs50 g
- Sweet paprika1 teaspoon
- Yellow potatoes1 u (200 g)
- Turmeric1 teaspoon
- Garlicto taste
- Parsleyto taste
- Extra virgin olive oilto taste
Procedure
0. In a blender, blend the cooked chickpeas with the boiled potato until smooth.
1. Add the breadcrumbs, minced garlic, paprika, turmeric, parsley, salt, and pepper. Mix until the mixture reaches a malleable consistency.
2. Shape into oval or round cutlets, about 1 cm thick.
3. Heat a non-stick pan with a drizzle of oil and cook the cutlets for 3-4 minutes on each side, until golden brown.

4. Wash and trim the turnip greens, removing the toughest parts. Blanch them in salted water for 5 minutes, then drain. In a pan, heat the oil with the crushed garlic cloves and, if desired, the chili pepper.
5. Add the turnip greens and sauté for 5-7 minutes. Season with salt. Arrange the hot cutlets next to the turnip greens, drizzling with a little olive oil.
