Ingredients
- Fresh spinach250 g
- Chickpeas (precooked)240 g
- Breadcrumbs50 g
- Garlic1 clove
- Curry1 teaspoon
- Sweet paprika1 teaspoon
- Extra virgin olive oilto taste
- Fine saltto taste
- Black pepperto taste
- Lemonto taste
Procedure
0. If using fresh spinach, blanch it in boiling salted water for 2-3 minutes, then drain and squeeze out excess water. If using frozen spinach, cook it according to the package directions and squeeze out excess water.
1. In a blender, blend the chickpeas with the spinach, garlic (if desired), lemon juice, paprika, and curry powder. Blend until smooth but not too smooth, leaving a slightly rustic texture.
2. Transfer the mixture to a bowl, season with salt and pepper, and gradually incorporate the breadcrumbs (or oat flour) until you obtain a dough that can be worked with your hands.
3. Divide the dough into 4 equal parts and shape the burgers, compacting them well with your hands.
4. Heat a nonstick pan with a drizzle of oil and cook the burgers for 3-4 minutes per side, until golden brown. You can also bake them in the oven at 200°C for 15-20 minutes, flipping them halfway through, or in an air fryer for about 10 minutes.
5. Serve the burgers on a bed of lettuce, or use them as a filling for a sandwich with whole-wheat bread, hummus, fresh tomatoes, and salsa of your choice.
6. For a tastier version, you can add a handful of grated Parmesan cheese or nutritional yeast. For an even crispier texture, coat the burgers in breadcrumbs before cooking.
