Ingredients
- Yellow potatoes4 u (800 g)
- Carrots4 u (300 g)
- Extra virgin olive oil2 tablespoons
- Golden onion2 u (300 g)
- Whole chicken1 u (1000 g)
- Fine saltto taste
- Bay leafto taste
- Rosemaryto taste
- Black pepperto taste
Procedure
0. Start by chopping the onions and carrots. You can leave the peel on the carrots if you like. Toast the vegetables in a pan without adding any oil. Then add the chicken pieces, skin-side down, and cook until the Maillard reaction occurs. Then, deglaze with white wine and add two tablespoons of oil and the spices.
1. Once the wine has evaporated, add half a glass of water and continue cooking over low heat, covered. This will take about 45 minutes. Meanwhile, prepare the potatoes. Wash the potatoes and cut them into cubes. Bring salted water to a boil and add a tablespoon of vinegar.
2. The vinegar will prevent the potato skins from peeling during cooking. Once the water boils, cook for about 12 minutes. Drain the potatoes and finish cooking in the air fryer for 15 minutes at 200°C (or until crispy). Don't forget the chicken; it shouldn't stick. Flip it halfway through cooking.
3. Once everything is cooked, plate and serve!
