Ingredients
- Chicken thighs500 g
- Small sweet peppers300 g
- Extra virgin olive oil2 tablespoons
- Lime1 u (50 g)
- Garlic1 clove
- Sweet paprikato taste
- Corianderto taste
- Fine saltto taste
- Black pepperto taste
- Cuminto taste
Procedure
0. Cut the chicken thighs into even bite-sized pieces. Wash and cut the peppers into thin strips or pieces. Grate the lime zest and set aside. Squeeze the juice.
1. In a bowl, toss the chicken with: • lime juice • lime zest • cumin • paprika • a pinch of salt and pepper • 1 tablespoon oil • crushed garlic • Cover and let simmer at room temperature for 15–20 minutes.
2. Heat 1 tablespoon of oil in a large skillet (preferably nonstick or cast iron). Add the marinated chicken (remove the garlic if you don't like its intense flavor) and sauté over medium-high heat for 5–6 minutes, until golden brown on all sides. Add the peppers and cook for another 8–10 minutes, stirring frequently, until the peppers are soft but still slightly crunchy and the chicken is cooked through.
3. Season with salt and pepper, turn off the heat and add the chopped fresh cilantro and a final squeeze of lime.
4. Excellent on its own with couscous, pita bread, or rice.
