Ingredients
- Ground chicken300 g
- Corn (precooked)125 g
- Greek yogurt 0%125 g
- Cherry tomato125 g
- Cucumber125 g
- Red onion1 u (150 g)
- Cornstarch (Maizena)1 tablespoon
- Lime1 u (50 g)
- Yellow potatoes1 u (200 g)
- Extra virgin olive oil1 tablespoon
- Basilto taste
- Black pepperto taste
- Fine saltto taste
- Parsleyto taste
Procedure
0. Start by peeling a potato and chopping an onion. Dice them and blanch them in water for about 15 minutes. This will soften the onion a little.
1. Combine the onion and cooked potatoes with the ground chicken. Season with salt and your favorite spices. Add a tablespoon or two of cornstarch. Mix the ingredients well with a fork and shape into meatballs. If you prefer, you can coat them in breadcrumbs first. Let the meatballs rest for a while.
2. Remove the meatballs from the refrigerator and brush them with a little oil. Cook in an air fryer for about 20 minutes at 200°C, flipping them halfway through.
3. In the meantime, you can prepare the tzatziki sauce. Wash and peel a cucumber. Dice it finely. In a bowl, combine the cucumber, Greek yogurt, a tablespoon of extra virgin olive oil, the juice of a lime, and some parsley. Mix, adding a generous pinch of salt. For the salad, I simply combined tomatoes, basil, and corn!
