  • 0. Melt half the butter in a heavy-bottomed pan and cook the finely chopped onions for 3-4 minutes until soft and translucent. Add the garlic and continue cooking for another two minutes.
  • 1. Rinse the chicken liver and remove any debris. Add it to the pan and cook over medium-high heat for 5-6 minutes until golden brown. Season with a pinch of salt, pepper, and mustard. If desired, add a little brandy.
  • 2. Blend everything together in an immersion blender or a hand blender until smooth. Add the remaining butter, cut into small pieces, and blend again until smooth.
  • 3. Serve in a small bowl with toasted bread.
