Ingredients
- Chicken thighs650 g
- Cherry tomato300 g
- White onion150 g
- Carrots150 g
- Celery150 g
- Garlic1 clove
- Black olivesto taste
- Extra virgin olive oilto taste
- Fine saltto taste
- Tomato pasteto taste
- Parsleyto taste
Procedure
0. In a high-sided pan, drizzle a little extra virgin olive oil and roughly chop the carrot, onion, and celery. Turn the heat on and after a few minutes, add the whole garlic clove and sauté.
1. Once the soffritto has softened, add the chicken pieces, skin-side down, and brown on all sides. Season with salt and pepper, if desired.
2. After a few minutes, add the quartered cherry tomatoes. Cook covered over low heat for about 40 minutes, stirring occasionally. When the cooking time is almost over (about 5 minutes), add salt if needed and then add the black olives.
