Procedure
0. Start by preparing the pastry. Mix the brown sugar with the egg until fluffy. Add the diced room-temperature butter. Once incorporated, add the flours and baking powder. Mix with your hands until everything is incorporated and the dough becomes smooth. Cover with plastic wrap and let rest in the refrigerator for half an hour.
1. Pour the milk, extract, and lemon zest into a saucepan. Bring almost to a boil, then turn off the heat and let steep for 10 minutes. In a bowl, whisk the egg yolks and sugar until light and fluffy. Add the sifted cornstarch and mix well.
2. Remove the zest from the milk and slowly pour it into the egg mixture, stirring constantly with a whisk. Pour everything into the saucepan and cook over medium-low heat, stirring constantly with a whisk or wooden spoon. Continue cooking until the cream thickens (about 3-4 minutes). Transfer the cream to a bowl, cover with plastic wrap, and let cool to room temperature. Refrigerate until ready to use.
3. Add cream to give a stronger flavor, creating a cream similar to diplomatica.
4. Preheat the oven to 200°C (400°F). Roll out the shortcrust pastry and use flower-shaped molds. Use small muffin cups or upside-down brigaderos to create a hollow. Arrange the pastry on top, being careful not to break it. Continue until all the pastry is used.
5. Bake for 15 minutes until golden brown and leave to cool.

6. Let's prepare the strawberries. Start by dicing them and seasoning them with a little lemon juice, a teaspoon of sugar, and finely chopped fresh mint. Fill them with the cream and arrange the fruit on top. Serve them for a special occasion or save them for a gourmet breakfast!
