La crostata di ciliegie è un dolce tradizionale dalla pasta frolla friabile e un cuore di ciliegie succose e dolci. Perfetta per le merende estive e i momenti di coccola.

  • 0. Place the flour, butter, sugar, egg, egg yolk, and a pinch of salt in the Thermomix bowl. Mix for 20 seconds at speed 6 until smooth. Remove the dough from the bowl, shape it into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  • 1. Clean and pit the cherries. Place them in a saucepan with the sugar and lemon juice, and cook over medium heat until the cherries release their juice and it begins to reduce.
  • 2. Add the cornstarch and stir well to avoid lumps, continuing to cook for another 2-3 minutes until the mixture thickens. Let cool completely.
  • 3. Roll out two-thirds of the shortcrust pastry and line a previously buttered tart pan. Pour the cooled cherry mixture onto the shortcrust pastry base.
  • 4. Roll out the remaining pastry and cut it into strips or use a pastry cutter to create a decorative design over the filling. Bake in a preheated oven at 180°C (350°F) for about 30 minutes, or until the pastry is golden brown.
