  • 0. Finely crumble the wholemeal biscuits and mix them with the melted butter until you obtain a smooth mixture. Line the bottom of a springform pan (diameter about 22 cm) with baking paper and distribute the biscuit mixture, pressing well with the back of a spoon to form a compact base.
  • 1. Place in the refrigerator to cool while you prepare the cream. Soak the gelatin sheets in cold water for about 10 minutes. In a large bowl, mix the Greek yogurt with the cheese until you get a smooth cream. You can use an electric whisk to get more creaminess.
  • 2. Soak two tablespoons of chia seeds and four tablespoons of water. After about ten minutes, a jelly will form.
  • 3. Add the sweetener, vanilla extract and lemon juice, and mix well. Squeeze the gelatin sheets and dissolve them in a saucepan with two tablespoons of hot water. Once dissolved, let it cool slightly. Add the dissolved gelatin and chia seeds to the mixture, stirring quickly to avoid lumps.
  • 4. Pour the cream over the cooled biscuit base and smooth the surface with a spatula. Refrigerate for at least 4 hours, or until the cream has completely solidified.
  • 5. In a small saucepan, cook the blueberries with the sweetener and lemon juice over medium heat, stirring occasionally, until the fruits soften and release their juice. Let cool completely.
  • 6. Once the cheesecake is completely set, remove it from the pan and transfer it to a serving plate. Spread the berry sauce over the surface of the cheesecake.
