Una variante più proteica della classica cheesecake, fatta con dolcificante e yogurt greco 0%. Da provare durante il periodo estivo!
Ingredients
- Greek yogurt 0%500 g
- Spreadable cheese200 g
- Dry biscuits200 g
- Blueberries125 g
- Butter80 g
- Sweetener50 g
- Water20 ml
- Chia seeds20 g
- Gelatin sheets10 g
- Vanilla essenceto taste
Procedure
0. Finely crumble the wholemeal biscuits and mix them with the melted butter until you obtain a smooth mixture. Line the bottom of a springform pan (diameter about 22 cm) with baking paper and distribute the biscuit mixture, pressing well with the back of a spoon to form a compact base.
1. Place in the refrigerator to cool while you prepare the cream. Soak the gelatin sheets in cold water for about 10 minutes. In a large bowl, mix the Greek yogurt with the cheese until you get a smooth cream. You can use an electric whisk to get more creaminess.
2. Soak two tablespoons of chia seeds and four tablespoons of water. After about ten minutes, a jelly will form.
3. Add the sweetener, vanilla extract and lemon juice, and mix well. Squeeze the gelatin sheets and dissolve them in a saucepan with two tablespoons of hot water. Once dissolved, let it cool slightly. Add the dissolved gelatin and chia seeds to the mixture, stirring quickly to avoid lumps.
4. Pour the cream over the cooled biscuit base and smooth the surface with a spatula. Refrigerate for at least 4 hours, or until the cream has completely solidified.
5. In a small saucepan, cook the blueberries with the sweetener and lemon juice over medium heat, stirring occasionally, until the fruits soften and release their juice. Let cool completely.
6. Once the cheesecake is completely set, remove it from the pan and transfer it to a serving plate. Spread the berry sauce over the surface of the cheesecake.
