Scopri la Cheesecake alle Rose, un dessert raffinato e romantico che unisce la cremosità del formaggio fresco al profumo delicato dei petali di rosa. Ingredients
- Spreadable cheese500 g
- Cow ricotta250 g
- Dry biscuits200 g
- Fresh cream200 ml
- Powdered sugar100 g
- Butter100 g
- Egg white37 g
- Whole milk30 ml
- Rose water20 ml
- Brown sugar15 g
- Gelatin sheets8 g
- Granulated sugarto taste
- Edible petalsto taste
Procedure
0. Finely crush the biscuits in a blender. Add the melted butter and sugar, mixing well. Press the mixture into the bottom of a baking pan (preferably a springform pan) lined with parchment paper. Refrigerate for at least 30 minutes.
1. Soak the gelatin in cold water for 10 minutes. In a bowl, mix the cream cheese, ricotta, and powdered sugar until smooth. Add the rose water and stir.
2. Whip the cream until stiff, but not too firm, and gently fold it into the mixture. Squeeze out the gelatin, dissolve it in the warm milk, and fold it into the cream. Pour the mixture over the base and smooth out the top. Refrigerate for at least 5 hours, preferably overnight.
3. Choose healthy, fresh, and untreated petals. Brush each petal with lightly beaten egg white. Roll them in granulated sugar. Let them dry on parchment paper for 6-8 hours (or in a convection oven at 40-50°C for 1 hour).
4. Decorate the cheesecake with the crystallized petals, a few drops of rose water and, if you like, with fresh raspberries for added tanginess.
5. Tips 💡 Rose water must be food-grade: check the label. For a more aromatic version, you can infuse a few rose petals into the cream before whipping (then strain). For a richer variation, you can also add chopped almonds to the base.
6. If you have trouble finding rose petals, I've provided a link to whole hibiscus flowers. Since they're dried, you can use them directly as a decoration, simplifying the recipe.
