  • 0. Pulse the biscuits until they resemble crumbly dough. Add the melted butter. Mix well. Pour the mixture into a tart pan with high sides (with a removable bottom or springform pan). Press down with the back of a spoon or a glass, creating high edges like a real tart. Refrigerate for at least 30 minutes (or 10 minutes in the freezer).
  • 1. Soak the gelatin in cold water for 10 minutes. Meanwhile, whip the cold cream and refrigerate it. In a separate bowl, cream together the cream cheese, powdered sugar, Greek yogurt, lime zest, and juice. Heat 2 tablespoons of this cream and dissolve the squeezed gelatin in it. Add to the rest of the mixture and stir. Finally, gently fold the whipped cream into the mixture, using bottom-up movements.
  • 2. Pour the cream into the base and smooth it out with a spatula. Refrigerate for at least 4 hours, preferably overnight.
  • 3. Garnish with lime wedges, fresh mint, and grated zest. If desired, brush with clear gelatin for a glossy finish.
