Supplì croccanti e filanti, tipici della cucina romana, con riso, mozzarella e sugo. Uno snack goloso e irresistibile da gustare ovunque.
Ingredients
- Tomato puree200 ml
- Carnaroli rice150 g
- Cheese100 g
- Eggs1 u (60 g)
- Bouillon cubeto taste
- Breadcrumbsto taste
- Fine saltto taste
- Corn oilto taste
- Parsleyto taste
- Black pepperto taste
Procedure
0. Cook the tomato puree, season with salt, and cook for 10-15 minutes. The sauce should be thick enough to prevent the supplì from falling apart during cooking.
1. At this point add the rice and cook it as if it were a risotto, adding a ladle of hot broth (made with the stock cube) once the previous one has been absorbed.
2. Once cooked, transfer the rice to a baking tray lined with baking paper and spread it out with a spoon (without pressing it down), allowing it to cool completely.
3. While the rice cools, tear the mozzarella into small pieces and let it drain. Once the rice is cool, you can proceed to shape the supplì: take a small amount of rice (the size of a meatball) with wet hands and flatten it in your palm. Place a piece of mozzarella on top and fold it around the rice, giving the supplì a small cylinder shape.
4. Dip the suppli in the beaten egg and then in the breadcrumbs, ensuring the coating adheres well. Heat the seed oil to 175-180°C (350-355°F) and fry a few suppli at a time, turning them frequently until golden brown all over. Transfer them, as they're done, to paper towels or special frying paper. Serve the suppli immediately, piping hot.
