  • 1. Separate the yolks from the whites into two different bowls.
  • 2. Egg yolks: Beat the egg yolks with the sugar until light, smooth, and fluffy (this will take at least 5-6 minutes with an electric mixer). Add vanilla extract, if using.
  • 3. Mascarpone: Add it a little at a time to the beaten egg yolks, mixing gently with a spatula or at low speed with a whisk. The cream should be smooth and compact.
  • 4. Egg whites: Beat them with a pinch of salt until stiff peaks form. Add them to the mascarpone cream in three batches, folding gently from the bottom up so as not to deflate the mixture.
  • 5. Line the base of the springform pan with parchment paper (optional, but useful for transferring the cake onto a cake stand). Start by arranging the ladyfingers upright along the edge of the pan, sugared side outward. If they're too tall, trim them slightly at the base to make them more stable.
  • 6. Bottom: Quickly dip a few ladyfingers in the coffee (just for 1 second per side) and arrange them on the bottom of the mold, covering the entire base.
  • 7. Pour a generous layer of cream over the ladyfingers, smoothing it out with a spatula. Repeat with a second layer of soaked ladyfingers, then more cream. Continue this process until all the ingredients are used up, finishing with a layer of cream. If you'd like a decorative surface, reserve some of the cream in a piping bag to pipe swirls on top.
  • 8. Dust the surface with unsweetened cocoa powder using a fine sieve. Garnish with fresh black cherries, whole or halved. You can also add small dollops of whipped cream for a more refined effect.
  • 9. Let it rest in the refrigerator for at least 4 hours (ideally overnight). This will allow the flavors to meld and the cake to set perfectly.
