Carote stufate in padella

Ingredients
- Vegetable broth200 ml
- Carrots4 u (300 g)
- Extra virgin olive oil2 tablespoons
- Golden onion1 u (150 g)
- Parsleyto taste
- Balsamic vinegarto taste
- Black pepperto taste
- Fine saltto taste
Procedure
0. Wash the carrots thoroughly. You can leave the peel on if you like. Cut them into quarters vertically. Peel the onion and chop it roughly. In a nonstick pan, toast the onions and carrots. Once a crust has formed, add oil, salt, and spices. Sauté for a few minutes.
1. Add the vegetable broth and cover. Cook for about 20 minutes. Remove the lid and raise the heat to thicken the broth.
2. Serve with bread or a spread like hummus.
