Ingredients
- Whole milk500 ml
- Granulated sugar250 g
- Water50 ml
- Eggs4 u (240 g)
- Vanilla bean1 u
Procedure
0. In a small saucepan, combine 100g of sugar and the water. Heat over medium heat, stirring initially until the sugar dissolves. Cook without stirring until a golden caramel forms. Be careful not to burn it, as it will become bitter.
1. Pour the hot caramel into the bottom of individual ramekins or a large flan pan, tilting the pans to distribute the caramel evenly. Let cool and harden.
2. In a small saucepan, heat the milk with the vanilla bean (splitting the bean to release the seeds) or add the vanilla extract. Bring to a gentle boil, then turn off the heat and let cool.
3. In a bowl, whisk the eggs with the remaining sugar until smooth. Remove the vanilla pod from the milk and slowly pour the warm milk into the egg and sugar mixture, stirring constantly to prevent the eggs from cooking.
4. Pour the egg and milk mixture into the molds over the caramel. Prepare a baking dish with hot water to cook the flan in a bain-marie.
5. Cover the molds with aluminum foil and place them in the pan with the water.
6. Bake in a preheated oven at 160°C (320°F) for about 45-60 minutes, until the flan is firm (you can check by inserting a toothpick; it should come out clean). Let it cool completely at room temperature, then refrigerate for at least 3 hours (preferably overnight).
7. Once completely cooled, unmold the flan by running a knife along the edges of the molds and invert it onto a plate. The caramel will drip over the dessert, creating a beautiful effect.
