  • 1. In a bowl, beat the eggs with a fork. Add a pinch of salt, pepper, and nutmeg. Stir in the parmesan (if using) and crumbled feta.
  • 2. Pour the beaten eggs into the pan with the cabbage. Distribute the ingredients evenly and cook over medium-low heat for 5-7 minutes, covered with a lid.
  • 3. When the base is golden brown and the surface is still soft, turn the omelette over using a plate or lid and cook for another 3-4 minutes.
  • 4. Transfer the frittata to a serving platter and let it cool for a few minutes. Serve in slices, accompanied by a fresh salad or whole-wheat bread.
  • 5. You can garnish the frittata with fresh herbs like parsley or thyme. For a lighter version, bake the frittata at 180°C for 20-25 minutes on a baking sheet lined with parchment paper.
