  • 0. First, peel the carrots and roughly chop them. Chop the cauliflower and an onion, then place them in a baking dish with the drained chickpeas. Season the vegetables with extra virgin olive oil, salt, and pepper. Bake for 35 minutes at 180°C.
  • 1. While the vegetables are cooking, bring some salted water to a boil and cook the bulgur and quinoa.
  • 2. Once the vegetables are cooked, add them to the bulgur and quinoa. Season everything with a dressing made from tahini, soy sauce, a squeeze of lemon, and parsley.
  • 3. Add basil, mint, sesame seeds or other flavorings to taste.
