Il riso integrale con uova e zucchine è un piatto sano, completo e leggero. Perfetto per un pranzo veloce ma nutriente, ricco di fibre, proteine e gusto naturale.
Ingredients
- Brown rice180 g
- Eggs2 u (120 g)
- Zucchini2 u (400 g)
- Golden onion1 u (150 g)
- Garlic1 clove
- Black pepperto taste
- Fine saltto taste
- Parsleyto taste
Procedure
0. Rinse the rice under running water. Bring a large pot of salted water to a boil. Add the rice and cook according to the package directions (usually 30-40 minutes). Drain and set aside.
1. Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil and cook the eggs for about 10 minutes. Cool them under cold running water, peel them, and cut them into wedges or pieces.
2. Wash and cut the courgettes into cubes or rounds. Peel and finely chop the onion and garlic.
3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until golden. Add the zucchini and cook for about 10 minutes, stirring occasionally, until tender but still slightly crunchy. Season with salt and pepper to taste.
4. Add the cooked rice to the pan with the zucchini and stir well to combine all the ingredients. Add the chopped hard-boiled eggs and stir gently.
5. Transfer the rice, zucchini, and hard-boiled eggs to serving plates. Garnish with chopped fresh parsley, if desired.
