  • 0. If using fresh fava beans, blanch them for 2 minutes in boiling water, drain, and remove the outer skin. If using frozen fava beans, thaw them at room temperature. In a saucepan, heat the oil and sauté the pancetta over medium heat until crispy.
  • 1. Finely slice the shallots and add them to the pancetta. Sauté for 2-3 minutes, stirring occasionally. Add the fava beans to the pan, stir well, and pour in the hot vegetable broth. Cook over medium heat for about 15-20 minutes.
  • 2. Season with salt and pepper, add the fresh thyme, and let it rest for a couple of minutes before serving. Serve the hot soup with crusty bread croutons and, if you like, a drizzle of extra virgin olive oil.
