Il pan brioche ripieno di cioccolato è un dolce soffice e goloso, perfetto per colazioni e merende. La morbidezza della brioche avvolge un cuore cremoso di cioccolato fondente.
Ingredients
- Manitoba flour500 g
- Semi-skimmed milk200 ml
- Dark chocolate200 g
- Butter80 g
- Granulated sugar80 g
- Honey10 g
- Fresh yeast8 g
- Fine salt4 g
- Eggs2 u (120 g)
Procedure
0. In a large bowl, dissolve the yeast in the warm milk and add a tablespoon of sugar. Let it sit for about 5 minutes until it begins to foam. Add the flour, the remaining sugar, the softened butter, the eggs, and a pinch of salt to the yeast mixture. Mix well until the dough forms.
1. Knead the dough on a lightly floured surface for about 10 minutes, until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours, or until doubled in size.
2. Once the dough has risen, roll it out on a lightly floured surface into a rectangle. Evenly distribute the chopped dark chocolate over the entire surface of the dough. Roll the dough up from the long side to form a log. Cut the log into slices about 2 cm thick.
3. Arrange the slices on a baking sheet lined with parchment paper, leaving a little space between each slice. Let the slices rise on the baking sheet for another 30 minutes. Brush the surface with beaten egg yolk to give it a nice golden brown color.
4. Bake in a preheated oven at 180°C for about 20-25 minutes or until golden.
5. You can vary the type of chocolate according to your taste, using milk or white chocolate for a different flavor. If desired, you can add a little vanilla extract to the mixture for a richer flavor.
