Ingredients
- Condensed milk305 g
- Cooking cream200 ml
- Dulce de leche150 g
- Granulated sugar70 g
- Butter15 g

Procedure
0. In a heavy-bottomed saucepan, pour the condensed milk, cream, and dulce de leche. Stir well with a silicone spatula to combine the ingredients while still cold. Add the butter and a pinch of salt: this will help balance the sweetness and enhance the caramel flavor.
1. Place the saucepan over low heat. Cook, stirring constantly to prevent it from sticking to the bottom. The mixture will slowly begin to thicken. Continue cooking until the mixture pulls away from the sides and bottom of the saucepan: this will take about 15-20 minutes. To check if it's ready, run a spatula along the bottom of the pan. If the indentation remains visible for at least 2-3 seconds before closing, you can turn off the heat.
2. Pour the mixture into a shallow container (such as a baking dish), spread it out slightly, and cover it with plastic wrap (so it doesn't form a crust). Let it cool first at room temperature for 30 minutes, then refrigerate for at least 2 hours (or overnight). Alternatively, you can wrap it in plastic wrap.
3. In a bowl, combine the granulated sugar and cinnamon. Pass the mixture through a fine sieve to obtain a fine, uniform powder, perfect for coating the brigadeiros without any graininess.
4. With your hands lightly greased with butter (or cold water), take small portions of dough (about 15 g each). Roll them between your palms until you obtain smooth, compact balls. Immediately dip them in the sugar and cinnamon mixture, making sure they adhere well.
5. The brigadeiros can be stored in the refrigerator for 4-5 days in an airtight container. They're best enjoyed at room temperature, so take them out at least 20 minutes before serving.

6. For a more elegant version, you can place each ball in a paper cup. If you want a more elastic and "pull-able" texture, you can add 10-15 g of glucose during cooking (optional). Try an alternative topping: toasted shredded coconut or finely chopped hazelnuts.
