  • 0. Cook the rice: • Rinse the rice under cold water. • Bring the salted water to a boil, reduce the heat, and cook covered for 15–18 minutes, until cooked through and sticky. • Remove from the heat and let it cool completely. It's best to prepare it a few hours in advance.
  • 1. Make the dough: • In a large bowl, mash the rice well with your hands or a fork until it becomes a sticky mass. • Add the raw meat, onion, garlic (if using), mint, parsley, and spices. • Knead with your hands for 5 minutes, until the mixture is smooth. If the mixture is too soft, add a little cornstarch (or rice flour).
  • 2. Shape the kibe: • With wet hands, take portions of dough and shape them into tapered cylinders (classic “torpedoes”). • Optional: insert a cube of stringy cheese or requeijão in the center.
  • 3. Cooking the kibe: • Frying: Heat the oil to 170°C and fry 4–5 pieces at a time until golden and crispy (4–5 min). • Oven: Brush with oil and bake at 200°C for 20–25 min, turning halfway through.
  • 4. Serving suggestion: Serve warm, with yogurt dip, hummus, or simply with lime and a fresh salad.
