Prepara una zuppa di fagioli occhio con garam masala, curcuma, peperoncino, cipolla e carota: una ricetta sana, speziata e facile per riscaldare le tue giornate.
Ingredients
- Vegetable broth700 ml
- Black-eyed beans (dried)200 g
- Extra virgin olive oil2 tablespoons
- Carrots2 u (150 g)
- Golden onion1 u (150 g)
- Turmeric1 teaspoon
- Chili pepper1 teaspoon
- Garam Masala1 teaspoon
- Fine saltto taste
- Black pepperto taste
Procedure
0. Prepare the beans: If using dried beans, soak them for at least 8 hours, then drain and boil them in clean water for about 45-50 minutes until tender (or use already cooked, well-drained beans).
1. Sauté: In a large pot, heat the oil and add the finely chopped onion. Sauté over medium-low heat for 5-6 minutes.
2. Season: Combine the finely diced carrots and chopped chili pepper. After a couple of minutes, add the turmeric and garam masala. Stir well to lightly toast the spices (1 minute).
3. Cook: Add the cooked black-eyed peas and stir. Cover with hot broth or water. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, allowing the flavors to meld.
4. Adjust: Season with salt and pepper. If desired, you can blend a small portion of the soup with a blender to make it slightly creamier.
5. Serve: Finish with a squeeze of lemon juice or some chopped fresh parsley.
6. Extra tip: if you want to spice it up, you can also add some diced potatoes or a piece of chopped fresh ginger during the sautéing stage!
