Questi biscotti sono perfetti per occasioni speciali come feste o cene, ma anche per il tè del pomeriggio. La loro friabilità e la dolcezza della confettura li rendono irresistibili. Ingredients
- Type 00 flour250 g
- Butter150 g
- Jam100 g
- Powdered sugar100 g
- Eggs1 u (60 g)
- Baking powder1 teaspoon
- Fine saltto taste
- Vanilla essenceto taste
Procedure
0. In a large bowl, combine the flour, baking powder, salt, and powdered sugar. Add the cold, cubed butter and work the mixture with your hands or a stand mixer until it resembles sand.
1. Add the egg and vanilla extract and continue kneading the dough until smooth and homogeneous. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
2. Preheat the oven to 180°C and line two baking sheets with parchment paper. Roll out the dough on a lightly floured surface until it's about 3-4 mm thick.
3. Using a round cookie cutter (about 6-7 cm in diameter), cut out circles. Use a smaller cookie cutter (2-3 cm) to create a hole in the center of half of the circles.
4. Arrange the cookies (both the whole discs and the ones with the hole) on the baking sheets and bake in the preheated oven for 10-12 minutes, or until the edges of the cookies are lightly golden.
5. Let the cookies cool completely before handling them. Take a whole cookie and spread it with a thin layer of jam. Place a cookie with a hole in the center on top of each jam-spread cookie, creating a sort of "sandwich." Dust generously with powdered sugar.
6. The Linzer biscuits are ready to enjoy! You can store them in a tin or an airtight container for a few days.
