Questi biscotti sono perfetti per occasioni speciali come feste o cene, ma anche per il tè del pomeriggio. La loro friabilità e la dolcezza della confettura li rendono irresistibili.   • 0. In a large bowl, combine the flour, baking powder, salt, and powdered sugar. Add the cold, cubed butter and work the mixture with your hands or a stand mixer until it resembles sand.
  • 1. Add the egg and vanilla extract and continue kneading the dough until smooth and homogeneous. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  • 2. Preheat the oven to 180°C and line two baking sheets with parchment paper. Roll out the dough on a lightly floured surface until it's about 3-4 mm thick.
  • 3. Using a round cookie cutter (about 6-7 cm in diameter), cut out circles. Use a smaller cookie cutter (2-3 cm) to create a hole in the center of half of the circles.
  • 4. Arrange the cookies (both the whole discs and the ones with the hole) on the baking sheets and bake in the preheated oven for 10-12 minutes, or until the edges of the cookies are lightly golden.
  • 5. Let the cookies cool completely before handling them. Take a whole cookie and spread it with a thin layer of jam. Place a cookie with a hole in the center on top of each jam-spread cookie, creating a sort of "sandwich." Dust generously with powdered sugar.
  • 6. The Linzer biscuits are ready to enjoy! You can store them in a tin or an airtight container for a few days.
