Ingredients
- Beef broth400 ml
- Priest's hat250 g
- Rice noodles200 g
- Corn oil15 ml
- Soy sauce5 ml
- Garlic2 cloves
- Lime1 u (50 g)
- Chili pepperto taste
- Gingerto taste
- Corianderto taste
- Lemongrassto taste
- Curryto taste
- Brown sugarto taste
Procedure
0. Place the ginger, garlic, lemongrass, cilantro, and chili pepper in a food processor and puree. Heat the oil in a pan over low heat. Add the mixture and cook for 5 minutes. Add the diced beef, soy sauce, curry powder, sugar, and broth. Cover and bring to a boil, then reduce the heat and simmer for 1 hour and 15 minutes. Remove the lid and cook for another 15 minutes, until the beef is tender.
1. Just before serving, prepare the noodles according to the package instructions. Drain well and divide between two bowls, then pour over the beef stew. Serve sprinkled with the remaining chili pepper and cilantro leaves, and with lime wedges for squeezing over the top.
