  • 0. In a bowl, mash the beans with a fork until coarsely ground. Add the mashed potato, breadcrumbs, cornstarch, minced garlic, paprika, oregano, salt, and pepper.
  • 1. Add a tablespoon of oil and mix well until the mixture becomes compact. If necessary, add more breadcrumbs to achieve the desired consistency. Shape the mixture into walnut-sized balls and arrange them on a plate. Let them rest in the refrigerator for 15 minutes.
  • 2. In a large skillet, heat the oil and sauté the chopped onion with the whole garlic and bay leaf. When the onion is golden, add the tomato paste and cook for a minute. Pour in the tomato puree, add the sugar, salt, and pepper, and cook over low heat for 15 minutes.
  • 3. Heat a drizzle of oil in a pan and brown the meatballs on all sides until golden brown. Transfer the meatballs to the sauce and cook for another 10 minutes, turning them gently.
  • 4. Garnish with fresh basil and a drizzle of olive oil. Serve the meatballs piping hot with toasted bread or pasta.
