Ingredients
- Borlotti beans (precooked)400 g
- Tomato puree400 ml
- Breadcrumbs4 tablespoons
- Granulated sugar1 teaspoon
- Yellow potatoes1 u (200 g)
- Cornstarch (Maizena)1 tablespoon
- Tomato paste1 tablespoon
- Bay leaf1 leaf
- Golden onion1 u (150 g)
- Extra virgin olive oil1 tablespoon
- Black pepperto taste
- Garlicto taste
- Dried oreganoto taste
- Fine saltto taste
- Smoked paprikato taste
Procedure
0. In a bowl, mash the beans with a fork until coarsely ground. Add the mashed potato, breadcrumbs, cornstarch, minced garlic, paprika, oregano, salt, and pepper.
1. Add a tablespoon of oil and mix well until the mixture becomes compact. If necessary, add more breadcrumbs to achieve the desired consistency. Shape the mixture into walnut-sized balls and arrange them on a plate. Let them rest in the refrigerator for 15 minutes.
2. In a large skillet, heat the oil and sauté the chopped onion with the whole garlic and bay leaf. When the onion is golden, add the tomato paste and cook for a minute. Pour in the tomato puree, add the sugar, salt, and pepper, and cook over low heat for 15 minutes.
3. Heat a drizzle of oil in a pan and brown the meatballs on all sides until golden brown. Transfer the meatballs to the sauce and cook for another 10 minutes, turning them gently.
4. Garnish with fresh basil and a drizzle of olive oil. Serve the meatballs piping hot with toasted bread or pasta.
