  • 0. Wash the basil leaves thoroughly and dry them gently. Coarsely chop the pistachios. If the sun-dried tomatoes are very hard, soak them in warm water for 10-15 minutes, then drain and squeeze them lightly.
  • 1. In a blender, add the basil leaves, pistachios, sun-dried tomatoes, and garlic (if using). Begin blending on low speed, gradually adding the olive oil. If the pesto is too thick, add 2-3 tablespoons of water until you reach the desired consistency.
  • 2. Season with salt and pepper to taste. If desired, add a few drops of lemon juice for a touch of acidity.
  • 3. The pesto is ready to use! You can use it as a pasta sauce, on bruschetta, or as a dip for salads and vegetables. Store the pesto in a glass jar, covering the surface with a drizzle of oil, and refrigerate. It will keep well for a few days.
