Funghi carnosi farciti con un mix saporito di erbe, pangrattato e formaggio, gratinati fino a doratura perfetta nel forno.
Ingredients
- Porcini mushrooms300 g
- Bell pepper200 g
- Cheese50 g
- Golden onion40 g
- Fine saltto taste
- Black pepperto taste
- Extra virgin olive oilto taste
- Rosemaryto taste
Procedure
0. Quickly rinse the mushrooms under running water. Don't immerse them completely, or they'll absorb too much water. Dry them thoroughly, especially the gills under the caps.
1. Wash the pepper and remove the stem, seeds, and indigestible white pith. Dice it into small cubes.
2. Peel the onion and finely chop it. Finely chop the rosemary leaves. Dice the mushroom stems.
3. Preheat the oven to 200°C (400°F). Heat a nonstick pan with oil and onions. Sauté over medium heat for two minutes, then add the mushroom stems and peppers. Cook for 3-4 minutes. Add the tomatoes and rosemary, season with salt and pepper, and cook for another five minutes.
4. Meanwhile, cover a baking sheet with parchment paper. Arrange the mushroom caps on the baking sheet, gill-side up, and season with a pinch of salt and pepper and a drizzle of extra virgin olive oil. Once the pepper mixture is ready, fill the caps with it. Bake for ten minutes. Remove from the oven, let cool for a couple of minutes, and serve.
