  • 0. Quickly rinse the mushrooms under running water. Don't immerse them completely, or they'll absorb too much water. Dry them thoroughly, especially the gills under the caps.
  • 1. Wash the pepper and remove the stem, seeds, and indigestible white pith. Dice it into small cubes.
  • 2. Peel the onion and finely chop it. Finely chop the rosemary leaves. Dice the mushroom stems.
  • 3. Preheat the oven to 200°C (400°F). Heat a nonstick pan with oil and onions. Sauté over medium heat for two minutes, then add the mushroom stems and peppers. Cook for 3-4 minutes. Add the tomatoes and rosemary, season with salt and pepper, and cook for another five minutes.
  • 4. Meanwhile, cover a baking sheet with parchment paper. Arrange the mushroom caps on the baking sheet, gill-side up, and season with a pinch of salt and pepper and a drizzle of extra virgin olive oil. Once the pepper mixture is ready, fill the caps with it. Bake for ten minutes. Remove from the oven, let cool for a couple of minutes, and serve.
