Ingredients
- Whole yogurt50 g
- Tahini50 g
- Lemon15 g
- Extra virgin olive oil2 tablespoons
- Cauliflower1 u (1250 g)
- Garlic1 clove
- Fine salt1 teaspoon
- Black pepperto taste
- Pomegranateto taste
Procedure
0. Divide the cauliflower florets into florets and wash them well.
1. In a saucepan with a steamer basket, add water until it reaches the bottom of the basket and cook the cauliflower with a lid on for about 10 minutes.
2. Transfer the cauliflower to a bowl and season it with 2 tablespoons of oil, 1/2 teaspoon of salt, a pinch of pepper, mixing well.
3. Now place the cauliflower on a baking sheet lined with parchment paper, large enough to fit evenly in a single layer. Bake at 180°C (350°F) until crispy and golden, stirring halfway through; this will take about 40 minutes.
4. Meanwhile, let's prepare the sauce. Crush the garlic clove with 1/2 teaspoon of salt. Add the lemon juice and finally the tahini, mixing well. Add enough water to achieve a yogurt-like consistency. Add the yogurt and mix well, adjusting the seasoning with salt and pepper if necessary.
