  • 0. Prepare the filling: In a bowl, combine the crumbled cheese, chopped parsley, and chopped onion. Mix well until smooth. Prepare the phyllo sheets: Carefully unroll the phyllo sheets on a clean work surface. Cut the phyllo sheets into strips about 10-12 centimeters wide.
  • 1. Fill the phyllo sheets: Take a strip of phyllo and place a small amount of the cheese and parsley filling at the bottom edge of the strip. Fold the sides of the phyllo over the filling and roll it tightly to the end of the strip, forming a cigar.
  • 2. Seal the phyllo börek: Once rolled, lightly brush the end of the strip with beaten egg to seal the phyllo börek. Repeat the process with the remaining phyllo strips and filling.
  • 3. Fry the börek: If you want to fry the börek, heat plenty of oil in a deep skillet over medium-high heat. Once the oil is hot, fry the börek in small batches until golden brown and crispy on all sides, about 3-4 minutes. Drain on paper towels to remove excess oil.
  • 4. Bake the sigar börek: If you prefer to bake the sigar börek, preheat the oven to 180°C. Place the sigar börek on a baking sheet lined with parchment paper and brush the tops with melted butter. Bake in the preheated oven for about 20-25 minutes, or until golden and crispy.
