Procedure
0. Peel and cut the cucumber into ½-centimeter cubes, place them in a large colander, and sprinkle with ¼ teaspoon of salt. Let drain for 20 minutes.
1. Meanwhile, in a large bowl, add the remaining ingredients—except the avocado, cucumber, and mint—plus 1/4 teaspoon salt. Stir well to combine.
2. Add the peeled and diced avocado and the drained cucumber. Mix well, gently mashing the avocado into the mixture. Add the mint and mix again.
