Risotto Asparagi Sedano e Limone

Risotto cremoso con asparagi freschi, sedano croccante e un tocco di limone: un piatto primaverile, leggero e ricco di sapori freschi e aromatici!
Ingredients
- Asparagus300 g
- Celery180 g
- Roma rice140 g
- Parmigiano Reggiano DOP70 g
- Extra virgin olive oil2 tablespoons
- Carrots1 u (75 g)
- Golden onion1 u (150 g)
- Lemon zestto taste
- Black pepperto taste
- Fine saltto taste
Procedure
0. Wash the asparagus and celery. Remove the woody bottoms of the asparagus and the base of the celery. Place all the asparagus and celery trimmed ends, along with the onion and carrot, in a pot. Cover with water, add a generous pinch of salt, and bring to a boil. Simmer for at least 30 minutes, then strain the broth and keep warm.
1. In a saucepan, add a tablespoon of oil and the rice. Toast it over medium heat for a couple of minutes, stirring frequently. Meanwhile, finely dice the asparagus and celery. Set aside the asparagus tips and cook them in a small pan with a drizzle of oil, a pinch of pepper, and a little grated lemon zest. Cook over medium heat for about 5 minutes. They should remain crunchy.
2. Begin adding the hot broth a ladle at a time, stirring and letting it absorb before adding more. After about 5 minutes, add the chopped vegetables. Continue cooking until the rice is al dente (15-18 minutes total).

3. Remove from the heat and add the Parmesan cheese, grated lemon zest, and a generous grind of black pepper. Stir vigorously until creamy. Arrange the asparagus tips on top. If desired, add a drizzle of balsamic vinegar.
