  • 0. To prepare the asparagus risotto, start by cleaning the asparagus, setting aside the tips and removing the white parts at the bottom.
  • 1. Prepare the broth using the vegetable stock cube and the asparagus trimmings. In a pan, brown the asparagus tips in a knob of butter. Add a pinch of salt and a pinch of pepper. Once browned, set aside.
  • 2. Meanwhile, cut the cheese and butter and place them in a bowl in the freezer.
  • 3. Slice the asparagus and cook them in a pan with a little broth. Meanwhile, you can start toasting the rice in a high-sided pan. Add a pinch of salt.
  • 4. After 2-3 minutes, begin cooking the rice with the broth, stirring to release the starches. Add broth gradually as it is absorbed. This will take about 20 minutes, but it depends on the rice you choose.
  • 5. Once the asparagus is cooked, blend it with an immersion blender along with the grated Parmesan cheese, half a ladle of broth, and a tablespoon of extra virgin olive oil.
  • 6. Once the rice is cooked, turn off the heat and stir in the asparagus cream and the frozen cheese and butter. Plate and serve hot, garnishing with asparagus tips and, if desired, balsamic vinegar.
