  • 0. Remove the tough outer leaves, trim the prickly tip, and peel the stem. Cut in half and remove any internal fibers. Soak in cold water acidified with lemon juice to prevent oxidation.
  • 1. In a saucepan, heat the oil with the garlic clove (which you can remove later). Add the drained and quartered artichokes and sauté for 2–3 minutes.
  • 2. Add the hot broth, cover, and cook over low heat for about 20–25 minutes, until tender and well-drained. If necessary, let the liquid evaporate at the end of cooking. Let cool slightly.
  • 3. Place the cooked artichokes in a blender (without the garlic), add the cream cheese and ricotta. Blend until smooth. Season with salt and pepper, and, if desired, add a few drops of lemon juice to brighten the flavor. For an even smoother consistency, pass it through a fine sieve.
  • 4. Pour into cups or bowls, cover and let rest in the refrigerator for at least 1 hour before serving.
  • 5. 🍽️ Serving suggestions: With warm croutons, breadsticks, or carasau bread. In individual glasses with shrimp, crispy speck, or Jerusalem artichoke chips. As a filling for vol-au-vents or mini savory tartlets.
