Nata come un’idea per svuotare il frigo dagli avanzi, è stata davvero apprezzata. Dal sapore delicato e particolare la riproporró senza dubbio.
Ingredients
- Hard cheese70 g
- Eggs4 u (240 g)
- Extra virgin olive oil2 tablespoons
- Artichoke2 u (500 g)
- Yellow potatoes1 u (200 g)
- Parsleyto taste
- Black pepperto taste
- Fine saltto taste
Procedure
0. Clean the artichokes by removing the toughest leaves and the inner beard, then cut them into thin slices and place them in water and lemon to prevent them from browning. Peel the potato and cut it into thin slices or small cubes. Peel the garlic and crush it lightly.
1. In a nonstick pan, heat a drizzle of oil and sauté the garlic clove for a few minutes. Add the potatoes and brown them over medium heat for about 5-7 minutes. Add the artichokes, season with salt and pepper, and cook for another 8-10 minutes, stirring occasionally. If necessary, add a splash of water to prevent them from drying out. Remove the garlic once the vegetables are cooked.
2. In a bowl, whisk the eggs with the grated cheese, milk (if using), a pinch of salt, and pepper. Add the cooked vegetables and mix well.
3. Pour the mixture into the same lightly oiled pan. Cook over medium-low heat for about 5-6 minutes, covering with a lid to ensure even cooking. When the edges are set, flip the omelette using a plate and cook for another 3-4 minutes on the other side.
4. Let it cool for a few minutes before cutting and serving. This step is crucial. If you like, add a little chopped parsley for a touch of freshness.
