Procedure
0. Prepare the grill: If you're using a traditional grill, make sure you have good-quality charcoal ready to light. If you're using an electric or gas grill, heat it to medium-high heat.
1. Prepare the arrosticini: Take the lamb meat cut into cubes and thread it onto wooden skewers, usually 4-5 pieces per skewer, depending on the size of the cubes and the skewers.
2. Sprinkle the arrosticini with coarse salt on both sides. You can also add a little ground black pepper and/or a drizzle of extra virgin olive oil and a few sprigs of fresh rosemary for extra flavor, if desired.
3. Cook the arrosticini: Place the arrosticini on the hot grill and cook them over medium-high heat, turning occasionally, until golden brown and cooked through on all sides, usually about 10-15 minutes.
4. Serve the arrosticini: Once cooked, remove the arrosticini from the grill and arrange them on a serving platter. You can serve them hot and enjoy them directly from the skewers, perhaps accompanied by toasted bread and a glass of Abruzzo red wine.
