  • 1. Prepare the arrosticini: Take the lamb meat cut into cubes and thread it onto wooden skewers, usually 4-5 pieces per skewer, depending on the size of the cubes and the skewers.
  • 2. Sprinkle the arrosticini with coarse salt on both sides. You can also add a little ground black pepper and/or a drizzle of extra virgin olive oil and a few sprigs of fresh rosemary for extra flavor, if desired.
