  • 0. In a bowl, mix the flour with a pinch of salt.
  • 1. Gradually add the water and knead until the dough becomes smooth and elastic. If necessary, add a little water or flour to adjust the consistency.
  • 2. Cover the dough with a cloth and let it rest for at least 30 minutes.
  • 3. Divide the dough into 4-6 balls and roll them out with a rolling pin until you obtain thin discs (about 2-3 mm).
  • 4. Heat a nonstick skillet over medium-high heat.
  • 5. Brush each disc with olive oil and cook in a pan for about 1-2 minutes per side, until slightly puffed and golden bubbles appear.
  • 6. If you want a super creamy hummus, peel the chickpeas by rubbing them between your hands or blend them immediately with a little water.
  • 7. In a blender or immersion blender, combine the chickpeas, tahini, lemon juice, garlic, salt, and cumin.
  • 8. Start blending, adding the oil and water little by little, until you obtain a smooth and velvety consistency.
  • 9. Taste and adjust with salt or lemon if necessary.
  • 10. Transfer to a bowl, garnish with a drizzle of oil and, if you like, paprika or sesame seeds.
  • 11. For an extra touch, you can serve everything with a drizzle of extra virgin olive oil mixed with chili pepper and finely minced garlic, creating an aromatic and slightly spicy sauce that enhances the flavor of the bread and hummus. Brush it on warm bread or pour it directly over the chickpea puree for a burst of Middle Eastern flavor.
