Apple Pie classica, con mele dolci e cannella avvolte in una crosta friabile. Un dessert tradizionale e irresistibile, perfetto per ogni occasione!
Ingredients
- Golden apples750 g
- Fresh cream425 ml
- Type 00 flour350 g
- Butter170 g
- Brown sugar125 g
- Egg yolk85 u (1445 g)
- Granulated sugar45 g
- Eggs1 u (60 g)
- Vanillin powder1 u
- Ground cinnamonto taste
- Fine saltto taste
Procedure
0. For the pastry: Sift the flour and salt. Add the butter and mix vigorously. Add the water and mix together. Once the mixture is smooth, cover with plastic wrap and refrigerate for half an hour.
1. Preheat the oven to 220°C. Spread two-thirds of the dough into a 9-inch tart pan. Peel and slice the apples. Toss the apples with the sugar and cinnamon and arrange them in layers inside the tart. Add water if necessary, especially if the apples aren't very juicy.
2. Roll out the remaining pastry and seal the pie, pressing the edges. Brush the surface with beaten egg and make a slit in the top. Bake for 20 minutes, then reduce the temperature to 180°C and bake for another 30 minutes.
3. Prepare the accompanying cream by heating the cream in a saucepan until boiling. Add the egg yolks, sugar, and vanilla and whisk vigorously. You may want to add a little cornstarch to ensure the sauce doesn't separate.
