Ingredients
- Vegetable broth1 L
- Carnaroli rice160 g
- Grana Padano50 g
- Dried porcini mushrooms20 g
- Extra virgin olive oil2 tablespoons
- Eggs2 u (120 g)
- Shallot1 u (40 g)
- Garlic1 clove
- Black pepperto taste
- Fine saltto taste
- Parsleyto taste
Procedure
0. Soak the dried mushrooms in warm water for about 20 minutes. Once soft, drain them (reserving the soaking water), chop them coarsely, and strain the water to remove any impurities.
1. In a pan, heat the extra virgin olive oil and sauté the finely chopped shallot along with the whole garlic clove. Once golden, remove the garlic and add the chopped mushrooms. Cook for a couple of minutes, adding a pinch of salt.
2. Pour the rice into the pan with the mushrooms and toast for 2 minutes, stirring frequently. Pour in a ladle of the mushroom soaking water. Once absorbed, continue cooking, adding the hot broth a ladle at a time, stirring occasionally.
3. While the rice is cooking, whisk the eggs in a bowl with the grated cheese, a pinch of salt, and pepper. Mix until smooth.
4. When the rice is al dente, turn off the heat and let it rest for 1 minute. Pour the egg and cheese mixture over the hot risotto and stir vigorously to combine, creating a creamy consistency. If necessary, add a ladle of broth to adjust the consistency.
5. Plate the risotto and garnish with chopped fresh parsley and, if desired, an additional sprinkling of cheese. Serve immediately.
