  • 0. Soak the dried mushrooms in warm water for about 20 minutes. Once soft, drain them (reserving the soaking water), chop them coarsely, and strain the water to remove any impurities.
  • 1. In a pan, heat the extra virgin olive oil and sauté the finely chopped shallot along with the whole garlic clove. Once golden, remove the garlic and add the chopped mushrooms. Cook for a couple of minutes, adding a pinch of salt.
  • 2. Pour the rice into the pan with the mushrooms and toast for 2 minutes, stirring frequently. Pour in a ladle of the mushroom soaking water. Once absorbed, continue cooking, adding the hot broth a ladle at a time, stirring occasionally.
  • 3. While the rice is cooking, whisk the eggs in a bowl with the grated cheese, a pinch of salt, and pepper. Mix until smooth.
  • 4. When the rice is al dente, turn off the heat and let it rest for 1 minute. Pour the egg and cheese mixture over the hot risotto and stir vigorously to combine, creating a creamy consistency. If necessary, add a ladle of broth to adjust the consistency.
  • 5. Plate the risotto and garnish with chopped fresh parsley and, if desired, an additional sprinkling of cheese. Serve immediately.
