Ingredients
- Lamb leg500 g
- Beef broth500 ml
- Cluster tomato3 u (600 g)
- Yellow potatoes3 u (600 g)
- Garlic3 cloves
- White onion2 u (300 g)
- Fine salt1 teaspoon
- Chili powder1 teaspoon
- Cardamom1 teaspoon
- Vegetable oil1 tablespoon
- Cinnamon stick1 u
- Ginger1 teaspoon
- Cloves1 teaspoon
- Cumin seedsto taste
- Turmericto taste
- Chili pepperto taste
- Black pepperto taste
- Corianderto taste
Procedure
0. To make the base: Heat the oil or ghee in a large pot over medium heat. Add the cumin seeds, cardamom, cloves, and cinnamon stick. Toast for 30 seconds until fragrant. Add the sliced onions and sauté until golden brown (about 10 minutes). Add the minced garlic and ginger, stirring for 1 minute until fragrant.
1. Add the meat pieces (cut into about 2-inch cubes) and sear on all sides until golden brown, about 5-7 minutes. Add the blended tomatoes and cook for another 5 minutes, until softened. Add all the ground spices: cumin, coriander, turmeric, chili pepper, salt, and pepper. Mix well. Pour in the hot broth (or water), cover, and simmer over low heat for about 40-50 minutes, until the meat is tender. (If using a pressure cooker, cook for 20 minutes after the whistle.)
2. Add the peeled and chopped potatoes and cook for another 15-20 minutes, until soft but not falling apart. Once the sauce has thickened and the potatoes are cooked through, turn off the heat and add the garam masala. Garnish with fresh cilantro and ginger strips.
