Ingredients
- Yellow potatoes3 u (600 g)
- Garlic3 cloves
- Cluster tomato2 u (400 g)
- Vegetable oil2 tablespoons
- Golden onion1 u (150 g)
- Turmeric1 teaspoon
- Cauliflower1 u (1250 g)
- Cumin1 teaspoon
- Fine saltto taste
- Chili powderto taste
- Gingerto taste
- Corianderto taste
- Lemonto taste
Procedure
0. In a large pot, bring plenty of lightly salted water to a boil. Add the cauliflower florets and cook for 3-4 minutes, until tender but still crunchy. Drain the cauliflower and set aside.
1. In a large skillet or wok, heat the vegetable oil over medium heat. Add the cumin seeds and sauté for a few moments until they begin to sizzle.
2. Add the chopped onion and cook until translucent, stirring occasionally.
3. Add the minced garlic and grated ginger. Continue cooking for another 1-2 minutes, until they release their aroma.
4. Add the chopped or pureed tomatoes and cook for about 5 minutes, until the tomatoes have softened and the sauce has thickened slightly.
5. Add the spices: turmeric, coriander powder, red chili powder, and salt. Stir well to combine.
6. Add the diced potatoes and stir until they're well coated with the tomato and spice mixture. Cover the pan and cook the potatoes for about 10-12 minutes, stirring occasionally, until they begin to soften.
7. Once the potatoes are soft, add the previously cooked cauliflower florets. Stir well to combine all the ingredients.
8. Cover the pan again and cook over medium-low heat for another 8-10 minutes, or until the cauliflower and potatoes are fully cooked and tender.
9. Taste and adjust the salt and pepper to taste. If you'd like a touch of acidity, you can add a little lemon juice at this point.
10. Once cooked, serve the Aloo Gobi hot, garnished with fresh parsley or coriander leaves if desired. You can also serve it with naan bread or basmati rice for a delicious and complete meal.
