  • 0. In a large pot, bring plenty of lightly salted water to a boil. Add the cauliflower florets and cook for 3-4 minutes, until tender but still crunchy. Drain the cauliflower and set aside.
  • 1. In a large skillet or wok, heat the vegetable oil over medium heat. Add the cumin seeds and sauté for a few moments until they begin to sizzle.
  • 2. Add the chopped onion and cook until translucent, stirring occasionally.
  • 3. Add the minced garlic and grated ginger. Continue cooking for another 1-2 minutes, until they release their aroma.
  • 4. Add the chopped or pureed tomatoes and cook for about 5 minutes, until the tomatoes have softened and the sauce has thickened slightly.
  • 5. Add the spices: turmeric, coriander powder, red chili powder, and salt. Stir well to combine.
  • 6. Add the diced potatoes and stir until they're well coated with the tomato and spice mixture. Cover the pan and cook the potatoes for about 10-12 minutes, stirring occasionally, until they begin to soften.
  • 7. Once the potatoes are soft, add the previously cooked cauliflower florets. Stir well to combine all the ingredients.
  • 8. Cover the pan again and cook over medium-low heat for another 8-10 minutes, or until the cauliflower and potatoes are fully cooked and tender.
  • 9. Taste and adjust the salt and pepper to taste. If you'd like a touch of acidity, you can add a little lemon juice at this point.
  • 10. Once cooked, serve the Aloo Gobi hot, garnished with fresh parsley or coriander leaves if desired. You can also serve it with naan bread or basmati rice for a delicious and complete meal.
