Ingredients

Procedure

  • 0. Wash and peel the potatoes, then cut them into cubes about 2 cm on each side. You can leave the peel on for a rustic touch, but it's important that the pieces are uniform in size to ensure even cooking.
  • 1. Blanch the potatoes in salted water for about 7 minutes, until just tender. This step helps soften the potatoes inside, but still allows them to get a crispy crust during the final cooking process. Drain the potatoes well and pat them dry with a cloth or paper towel.
  • 2. In a bowl, combine the blanched potatoes with the olive oil, sweet paprika, salt, pepper, and parsley (if desired). Make sure all the potatoes are well seasoned.
  • 3. Preheat the air fryer to 200°C for 5 minutes.
  • 4. Place the potatoes in the air fryer basket, taking care not to overcrowd them to ensure even cooking. Cook for about 20-25 minutes, turning the potatoes halfway through. The potatoes are ready when they're golden and crispy on the outside, yet soft on the inside.
  • 5. In a small saucepan, heat the olive oil and sauté the chopped onion and garlic for 3-4 minutes, until soft and translucent. Add the hot paprika and stir well for a minute, then add the tomato puree, red wine vinegar, and teaspoon of sugar (if using), and season with salt and pepper.
  • 6. Let it simmer for 10-15 minutes, stirring occasionally, until the sauce thickens and the flavors blend well.
  • 7. Once cooked, transfer the patatas bravas to a serving platter and pour the hot brava sauce over them. Serve immediately as an appetizer or side dish, perhaps accompanied by a cool drink to balance the spiciness of the sauce.
