Procedure
0. Wash and peel the potatoes, then cut them into cubes about 2 cm on each side. You can leave the peel on for a rustic touch, but it's important that the pieces are uniform in size to ensure even cooking.
1. Blanch the potatoes in salted water for about 7 minutes, until just tender. This step helps soften the potatoes inside, but still allows them to get a crispy crust during the final cooking process. Drain the potatoes well and pat them dry with a cloth or paper towel.
2. In a bowl, combine the blanched potatoes with the olive oil, sweet paprika, salt, pepper, and parsley (if desired). Make sure all the potatoes are well seasoned.
3. Preheat the air fryer to 200°C for 5 minutes.
4. Place the potatoes in the air fryer basket, taking care not to overcrowd them to ensure even cooking. Cook for about 20-25 minutes, turning the potatoes halfway through. The potatoes are ready when they're golden and crispy on the outside, yet soft on the inside.
5. In a small saucepan, heat the olive oil and sauté the chopped onion and garlic for 3-4 minutes, until soft and translucent. Add the hot paprika and stir well for a minute, then add the tomato puree, red wine vinegar, and teaspoon of sugar (if using), and season with salt and pepper.
6. Let it simmer for 10-15 minutes, stirring occasionally, until the sauce thickens and the flavors blend well.
7. Once cooked, transfer the patatas bravas to a serving platter and pour the hot brava sauce over them. Serve immediately as an appetizer or side dish, perhaps accompanied by a cool drink to balance the spiciness of the sauce.
